     Paiwan tribe culture places a high value on rites of passage, which express experiences and respect for life. From birth to death, a person's identity and status are transformed with some rituals. Thus, in the course of life each important stage is marked by a ritual of passage.
     Glass beads, traditional cultural relics of Paiwan, are given as blessing on special days. We choose some beads based on its meaning, match the rites of passage from birth, adult, marriage, to death and develop four dishes. All the ingredients are referred to the food culture of Paiwan tribe. Raw materials are used instead of highly processed food to express the natural lifestyle of indigenous. "Culture" can be completely shown in our dishes.



Birth , 01
"Praying wishes, no disaster, no difficulty."


The appetizer "birth" is mainly made up of white wine. Sharing white wine represents the sharing of happiness with the public in Paiwan tribe. The concentric circles are made of sugar slab.
People smash the sugar piece with spoon before tasting rice wine. Rice wine symbolizes amniotic fluid, and the movement of smashing means the moment that amniotic fluid water just breaks, a coming of a life. 





Adult, 02
"Guarding, defending, showing courage and achieving extraordinary achievements."


The second dish, "Adult" is the main course which symbolizes the transformation of the boy into a brave and competent adult. The meal is made from black sticky rice. Three triangle rice balls are placed to present the diamond-pattern on Baibu snake, as the symbol of bravery in Paiwan society. Scallion and chili are not only decoration but also seasoning with the strong tastes. In addition, rice ball is a food that can be carried easily when Paiwan people hunt the forest. 




Marriage , 03
"The beauty of love when we meet."

Marriage is inspired from "peacock bead" as a symbol of love. Mochi, a traditional food in indigenous tribes, is malleable and sticky, which represents the inseparable relation in love. Different types of sweet beans are used as stuffing, just like the colorful costumes worn by Paiwan people on the festive occasion of wedding.




Death , 04
"The tears of the sun symbolize missing."


The dessert, Death, is designed from the concentric circles of the pearl of tears. The pearl of tears symbolizes the power of the beginning. Death is not the end of everything; instead, it's another starting point. As the four dishes are finished, the Paiwan culture can be passed on to diners. Taro, a staple food of Paiwan people, is mainly used in the cuisine, combined with tapioca starch, sugar, etc. This "blue" dessert look like tears of missing, ending the whole unforgettable dining experience.
